O'Payo cocoa beans are organically grown in the remote and highly protected Bosawas Natural Reserve in the northern mountains of Nicaragua. It’s the largest nature reserve in Central America and was declared a biosphere reserve by UNESCO in 1997.
We carefully roast, stone grind, and conch the O'Payo beans into chocolate over three days. The chocolate is then left to mature in large blocks, developing naturally unique, complex flavors before we temper, mould, and package it for your enjoyment.
Fun Fact: In 2015, the International Cocoa Organization recognised Nicaragua as one of only nine countries in the world with 100% fine cocoa origin.
